Just in time for Super Bowl Sunday!

Who says game day snacks have to be unhealthy? Who says you should feel guilty for eating them? NOT ME!

I say, make the healthier version (but just as – in fact – even MORE, delicious)… and guilt needn’t apply.

Today I bring you my version of the tried-and-true Nacho Dip. Sure, there are so many recipes out there, but I wanted to make sure you’re using the best ingredients to give you more satisfaction without the unwanted junk. And of course, I wanted it to be delicious.

Here are some of the GOODS:

  • The salsa is sugar free. So many out there have added sugar. Boo to them.
  • I use full-fat sour cream. This is less processed than the lower-fat versions, and is more stabilizing for blood sugar (and also more satisfying). Plus, it provides fat-soluble vitamins such as A and D.
  • The brand of refried beans I use is called Eden. This company goes the extra mile to ensure a healthier product, and therefore healthier people (that’s us). They use organic beans, and there’s not an additive in sight. Plus, they use sea salt rather than table salt, which means no chemicals and a heck of a lot more minerals.
  • Cheese made from raw, or unpasteurized, milk is typically easier to digest and more nutrient-rich. It is a fermented product, meaning it provides healthy probiotics and enzymes. It’s naturally lactose free, and the minerals it contains are easier to absorb.
  • The chips are made from organic corn, and don’t contain wheat flour, which many tortilla chips do. (Wheat tends to be hard to digest and can cause many physical and mental symptoms. Plus, it’s everywhere; the more you consume, the more likely you are to react to it.)

This recipe is kid-approved, boyfriend-approved, and general Super Bowl watcher-approved. And, you can whip it together in under 10 minutes. All the bases? Covered. Oh wait… wrong sport. 🙂

5-Layer Nacho Dip

398ml Refried Black Beans (I love the Eden brand; find at health food stores)
Taco Seasoning*
1 cup salsa (your choice of heat!) (look at the ingredient list; ensure no sugar has been added –> ex: Neal Brothers Organic)
1/4 cup chopped green onion (about half a bunch)
1 cup full-fat sour cream (mine is 14%)
2 1/2 cups raw medium cheddar cheese (about 5 oz) (ex: L’ancêtre or la chaudière brand)

*Taco Seasoning:
2 tsp chili powder
1 1/2 tsp cumin
1 tsp sea salt
1 tsp freshly ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp paprika
1/4 tsp hot chili flakes

Mix all ingredients in a small bowl. Done!

Serve with:
1 bag (or more) of Neal Brothers Organic Blue Tortilla Chips

Empty out the can of refried beans into a mixing bowl. If it seems dry, add a small amount of olive oil (about 1-2 Tbsp) and mix with a fork. Continue until desired texture is reached. Add the Taco Seasoning (the entire amount) to beans, and mix thoroughly. Using a dish with sides (mine is 11 x 7 x 1.5), spread the ingredients out in the order listed above.

Tada! A deliciously homemade, much healthier Super Bowl snack.
