Who doesn’t love a good sweet potato fry? Or 20? These babies are packed with vitamin A (we’re talkin’ almost 35,000 IU per large sweet potato), and are also a source of fibre as well as potassium, calcium, magnesium, and vitamin C. Try them on their own as a yummy snack or, of course, as a yummy side dish with one of your fave meals. Super easy and super delicious.

Sweet Potato Fries

2 large sweet potatoes
1/4 cup coconut oil, melted
2 Tbsp dehydrated garlic scapes (I used The Ultimate Spring Garlic Greens Seasoning)
2 tsp garlic powder
1/4 tsp sea salt
4 grinds fresh black pepper (about 1/8 tsp)

Preheat oven to 375°F. Wash sweet potatoes well and chop into small fry-like pieces. Put into mixing bowl and pour coconut oil over top. Stir to mix and coat the potatoes. Add the remaining ingredients and stir to combine. Spread potatoes out on a parchment paper-lined baking sheet. Bake for 30 minutes or until soft, flipping potatoes halfway through. Broil for about 2 minutes to enhance crispiness. Let cool and serve (or just, you know, eat right from the pan…). 🙂
