So, my boyfriend is pretty competitive, and he had an idea today to one-up my Love Bites. I got home from work and found him in the kitchen surrounded by bags full of nuts, seeds, dried fruit, and more. I immediately got excited and hurried in to see what he was up to. Turns out, he had just finished putting together his own Valentine’s Day treat, which he ended up naming Cupid’s Cubes. I had absolutely nothing to do with this, and am very happy with the results (and the fact that he did this, period). Even though his motivation was winning. 🙂

I told him I just had to post this for all of you to see, and being competitive, he was happy to share (and for him, to hopefully beat my Love Bites).

These are delicious, crispy, fruity, hint-of-chocolatey Cubes of delight. Once you and your honey give each other Love Bites, enjoy some of these together. 🙂

Cupid’s Cubes

1 cup sunflower seed butter
1/4 cup almond butter
1 cup honey
1 – 175g container strawberry goat milk yogurt (Hewitt’s brand)
1 cup crunchy rice cereal (Enjoy Life brand)
1/2 package Prana Go Nuts mix (maple syrup-coated nuts), chopped
1 1/2 cups whole oats
1 cup dried apple, chopped
1/3 cup sunflower seeds
1/3 cup slivered almonds
1/3 cup hemp hearts
1/3 cup pumpkinseeds
1/3 cup cocoa powder
1/3 cup unsweetened shredded coconut
1/4 tsp cinnamon

Combine sunflower seed butter, almond butter, honey, and yogurt in a large bowl. Stir in cocoa powder. Add all other ingredients and mix together (get your hands in there to really get things moving). Note: my boyfriend didn’t love the consistency at first (he likes his desserts drier rather than gooey), so he added more dry ingredients; specifically, oats and crunchy rice cereal. You do whatever floats your boat… if you like them more gooey, leave them as they are!

Press mixture into an 11 x 7″ dish and chill for 1 hour, then cut into squares (otherwise known as Cubes). Store in the fridge.

So easy, even Cupid can do it.
