“Cauliflower soup” on its own sounds kinda boring if you ask me, but add the word “curried” in front and I immediately start salivating. And I have to say, roasting the cauli also ups the deliciousness factor in a big way.
Now, you will notice that I’ve added extra spices at the end. You may or may not want to do this based on the size of the cauliflower (and therefore how strong the flavour already is), and most especially, based on your tastebuds. I love lots of flava, as does Miguel, so adding extra is a must for us.
Curried Cauliflower Soup
1 large cauliflower, chopped into medium-sized pieces
1 medium yellow onion, chopped
2 large garlic cloves, chopped
1/4 cup (approx) coconut oil (melted, or you could use liquid coconut oil)
1 can full-fat coconut milk
4 cups chicken broth
1 tsp cumin
1 tsp curry powder
1 tsp sea salt
1/2 tsp black pepper
1/4 tsp cayenne
Chopped green onion on top
*Option to add extra spices at the end to your taste
Preheat oven to 375°F. Spread cauliflower on a baking sheet (I used parchment paper as well). Pour coconut oil on top of cauliflower, then sprinkle spices on top. Rub them in with your fingers and try to season all the way around most of the cauliflower pieces. Roast for 30 mins, stirring halfway.
Sauté onion until soft then add garlic and sauté for another minute or so, then pour in the broth and add cauliflower. Sauté at medium heat for about 20 mins to let the flavours meld together. Purée (you can either ladle soup into a blender or simply use an immersion blender). Stir in coconut milk, then adjust flavours as desired.* Sprinkle each bowl with chopped green onion.
*Here’s how I adjusted it… I added:
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp curry powder
1/4 tsp cumin
1/8 tsp cayenne
