If you know me personally and have ever been at a get together avec moi, you’ve likely tried this app. My mom has made it for years, and it’s become quite the hot request whenever she (and now I) go to a party.
For people who are sensitive to regular dairy, I find many are better able to digest goat cheese (and therefore it’s less likely to cause issues with the ol’ bowel).
My most favourite time to make this is in the summer, since all the herbs come fresh from my backyard… but no, that won’t stop me from making it all year round.
Tip 1: Although exact amounts are given for the herbs below, it doesn’t actually have to be THAT exact. I’ve given you a baseline, which is the actual recipe yes, but feel free to play it by ear. Or eye. Or really, taste bud.
Tip 2: As you pour the mixture over the cheese, it may seem like a ton. Fret not! Just put as much on as you would like, and store the rest in a sealed glass container in the fridge for up to a few weeks (though I sometimes keep mine for even longer).
Enjoy the deliciousness!
Goat Cheese Savoury Spread
300 grams goat cheese
¾ cup olive oil
2 Tbsp chopped fresh basil
2 Tbsp chopped fresh rosemary
2 Tbsp chopped fresh thyme
2 Tbsp chopped fresh parsley
2 cloves garlic, chopped
¼ tsp hot chili flakes
¼ tsp freshly ground black pepper
¼ cup chopped sundried tomatoes
¼ cup chopped black olives
Pour olive oil into a glass measuring cup, and add each following ingredient as it’s ready. Place goat cheese into serving dish with sides. Stir oil mixture and pour over top of cheese. Lightly push the herbs, garlic, etc. onto the top of the cheese so they stay in place. If you make this in advance, let it sit at room temperature for about an hour before serving to let the cheese and oil soften. Enjoy with vegetables or gluten free crackers (my fave are Mary’s Crackers or Skinny Crackers). If you have any left over, it can be stored in the fridge up to about 5 days.
