Have you ever wished you could eat your favourite dessert or snack, like really enjoy it, without feeling guilty? Or physically crappy?
Well guess what… you can! Yup, it’s true.
All you have to do is use better-for-you, dare I say healthy ingredients! And here’s another guess what: these healthier versions can taste just as good as, and usually even better than, the unhealthy ones! Yum.
Here is one of the recipes I have created to do just that: mimic a really bad-for-you dessert and make it great-for-you!
Try not to eat the whole thing in one sitting (but if you do, so what?) 🙂
Chocolate Pudding
2 medium, ripe avocados, scooped out (cores removed)
1/2 cup + 1 Tbsp honey (and yes, I feel that the extra tablespoon makes all the difference) 🙂
1/2 cup cocoa powder
1 cup unsweetened vanilla almond milk
2 Tbsp Udo’s Oil
2 Tbsp vanilla extract
1/4 tsp sea salt
Combine all ingredients in a blender or food processor and blend until smooth. Â Add more almond milk if a thinner consistency is desired. Depending on blender, stirring may be required in between blending. Once smooth, transfer to a bowl and chill in the fridge for about an hour. Serve as is, or with some fruit on top, or (my favourite way), as a dip for various fruits (strawberries, blueberries, raspberries, banana, pineapple, etc.). The options are endless!
Remember: no guilt! Only good! 🙂
Let me know YOUR favourite way of devouring this deliciousness…
This pudding is absolutely “to-die-for”!!! I served it to 24 people and they are still raving about it.
I modified by using coconut oil…..mmmmm
THANKS Laura!
That’s amazing! Great modification too. Thanks Karen 🙂
