With lots of summer get-togethers and shindigs happening lately, you’re probably finding yourself scrambling with what to bring. Scramble no more, my friends; today I pass on a delish guacamole recipe to you. Isn’t it pretty? And healthy, too! Yet another way to get essential fatty acids into our day… beyond the avocados, check out the Udo’s Oil in there. Yum.

Holy Guacamole!

2 large ripe avocados, skin and cores removed and 1 core put aside*
1 large hothouse tomato, diced (equals about 1 cup)
¼ cup green onion, diced
2 large cloves garlic, minced
2 Tbsp Udo’s Oil (can be found at health food stores)
2 Tbsp lemon juice
½ tsp sea salt
Dash freshly ground black pepper, or to taste
2 dashes cayenne powder, or to taste

Mash avocados in a large mixing bowl, then add the rest of the ingredients. Stir together and chill in the fridge for about an hour. Transfer to a serving dish and voila! Serve with a variety of veggies and/or tortilla chips.

*Put the core into the guacamole before chilling in the fridge; it helps to keep the nice bright green colour from turning dark. You can keep the core in the guacamole when serving, or remove it; the choice is yours!
