The Christmas season is in full swing, so I feel the need to share a little chocolatey goodness with you. This recipe really couldn’t be any easier, and the deliciousness factor? Well, if you ask me, it’s way up there. They’re also the “best I’ve ever had!” according to Miguel (my boyfriend). He’s really honest when it comes to his thoughts on new recipes and foods in general, so I think it’s safe to say we have a winner here.

The first time I made these, they were too dry and lacked a certain richness, so I added butter and then everything changed. Butter really does make things better. As a healthy side note, butter (being a great source of healthy fat) will help to slow down the release of sugar into the bloodstream, thereby keeping a more balanced blood sugar level and preventing the huge swing and resulting drop. So, double bonus here.

I’ve used dark chocolate chips to cut down on the sugar content (though these still are a source of it). And, I’ve used sucanat instead of the white stuff, as it’s less refined and therefore a bit better on the sugar scale.

If you need to whip up a last-minute holiday treat for a potluck, family gathering… or just for you to enjoy (no judgement here!), I highly recommend these; they take approximately 7 minutes to prepare (plus about an hour to chill in the fridge… or just stick ’em in the freezer for an even faster finish).

No-Bake Chocolate Drops

1 cup dark chocolate chips
1 cup natural peanut butter
½ cup butter
½ cup sucanat
3 cups large flake oats (or use quick oats for a slightly less chewy texture)
¼ tsp sea salt

Melt chocolate chips, peanut butter, and butter together. Stir in sucanat and salt, then stir in oats. Place in uneven drops on cookie sheet, and chill in fridge for 1 hour minimum (or freezer for 30 minutes). Store in fridge.
