Are you a pumpkin-spice-everything lover? Or are you like, meh?

 

 

 

I’m kind of neither actually… while I don’t usually like pumpkin spice lattes (ugh, artificial flavour), I do really enjoy foods and drinks that incorporate the real spices… including these pumpkin spice muffins, as it so happens!

 

 

 

There are SO many ways you can tweak the blend of spices, so once you try mine, you can experiment as you see fit. Some of us like it strong, others like it nice and mild… and I’m somewhere in between!

 

 

 

Either way, pumpkin spice is THE flavour of the season. And for me, there is no better way to enjoy it than in a delicious, soft, right-out-of-the-oven muffin (with lots of butter, obvi). If you’ll be trying these babies out, let me know in the comments!

Pumpkin Spice Muffins – Dry Ingredients:

 

 

 

2 cups spelt flour
3/4 cup oats (rolled, large flake, or quick cooking)
1 cup walnuts, finely chopped
1 cup coconut sugar
2 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt

 

 

 

Wet Ingredients:

 

 

 

3/4 cup coconut oil, melted
1.5 cups pumpkin puree
3 eggs
1/2 cup maple syrup

 

 

 

Preheat oven to 325°F. In a large bowl, stir together dry ingredients. In a medium bowl, whisk eggs, then add remaining wet ingredients. Pour wet ingredients into dry, and gently fold until mixed. Pour into muffin liners, each almost full. Bake for about 20-25 minutes, or until toothpick inserted into centre of muffins comes out clean. Cool for about 10 minutes on a cooling rack, and enjoy!
