A while back, I held a contest to name the salad dressing below. I made it, tried it, but couldn’t think of a name for it. So, I put it out there to see what kind of responses I got. The winning response is the name of this blog post… Liquid Gold. It was thought up by Emilie Penfold, Go To Health’s newest heroine. For that, she has won a 5-class Zumba pass, expiry: never. And, of course, fame, since she’s named here. Haha!

I chose Liquid Gold for 3 reasons:

1. The colour is golden.
2. The quality and goodness of the ingredients makes it as good as gold (better, actually).
3. It’s funny. And I like funny.

So many people have gone the healthy route by increasing the amount of salads in their everyday diet. But wait! What is that stuff they’re pouring on top? Oh, no! Stop! Stop, stop, stop!

Of course, they’re not all bad, I know. But oh so often, they’re filled with sugar, chemicals, artificial flavours and colours, and preservatives. YU. MMY.

Instead of limiting the amount of dressing you drizzle over your salads due to the fat content or what have you (even though the point is to avoid the bad fats while enjoying the good ones in abundance), make your own dressing full of health and goodness, and pour it on, baby! The recipe below is a delish, nutrient-rich homemade salad dressing that the whole family will enjoy. It is loaded with good fats (essential fatty acids, or EFAs), which are required by every single cell in our body to perform vital functions. Also, it contains apple cider vinegar, which is great for digestion, weight control, and alkalizing the body.

Can I have more dressing, please?

Liquid Gold

1/2 cup Udo’s Oil (can be found at health food stores)
6 Tbsp apple cider vinegar
1 Tbsp maple syrup (optional)
1 clove garlic, finely chopped
1/2 tsp sea salt
5 grindings of fresh pepper
1/2 tsp dried basil

Pour all ingredients into a glass container (preferably dark/opaque), and gently shake. Store in fridge for up to 10 days.
